Jaggery & Cardamom French Toast – A sweet breakfast with warm Indian spices.

French toast is a family favorite, but when I added jaggery and cardamom to the mix, Jaggery & Cardamom French Toast became our new obsession. I’ll admit, I wasn’t sure how my kids would react to the twist, but my 14-year-old practically inhaled his portion. “Mom, this is like French toast, but BETTER,” he said between bites. I guess I’ll take that as a win! Of course, my toddler just wanted to pour syrup over everything, and the 7-year-old kept asking for just one more slice. But that’s the fun of it, right? Watching them enjoy something so simple, and knowing that I definitely nailed it this time. 

Serving Count: 4 servings (1 slice per person)

Macros: 

  • Protein: 8g 
  • Carbs: 45g 
  • Fat: 15g 

Ingredients: 

  • 4 slices thick bread (preferably whole wheat) 
  • 2 eggs 
  • 2 tbsp jaggery powder (or grated jaggery) 
  • ½ tsp cardamom powder 
  • ½ tsp cinnamon 
  • 1 tsp vanilla extract 
  • 1 tbsp milk 
  • 1 tbsp ghee or butter (for frying) 
  • Maple syrup (for drizzling) 

Instructions: 

  1. In a bowl, whisk together eggs, jaggery powder, cardamom, cinnamon, vanilla extract, and milk. 
  1. Heat a griddle or non-stick pan over medium heat and add ghee or butter. 
  1. Dip the bread slices in the egg mixture, ensuring both sides are well-coated, and fry them on the pan until golden brown and crispy. 
  1. Serve the French toast with a drizzle of maple syrup, or even more jaggery syrup if you like it extra sweet! 

Suggested Sides: 

  • A side of fruit salad with mangoes, berries, and bananas for a sweet contrast 
  • A cup of masala chai or ginger tea to complement the spices 

Family Fun Fact: 

My 14-year-old was practically inhaling his portion of these, and my toddler? She spent most of her time trying to cover everything with syrup, because why not?
